Brassica juncea ‘Red Frills’ (syn. Brassica juncea var. crispifolia ‘Rubra’) – A finely-cut mustard green that is as tasty as it is beautiful. ‘Red Frills’ features fringed burgundy-red leaves that add the taste of mustard and horseradish to salads, stir fries and sandwiches. This Japanese heirloom is ready to harvest from seed in about 40 days. Grows 12″ high. Annual.
Eruca sativa (syn. Eruca vesicaria sub. sativa) – The peppery green leaves of Arugula, Salad Rocket or Roquette are popular in salads and can be direct sown starting in March. Harvest young individual leaves (they are less bitter) or grow entire plant to 5-6″ high and cut it off entirely at the base for use. Useful fall to winter crop if protected. Grows to 6-10″ high. Poterium sanguisorba (syn. Sanguisorba minor) – Salad Burnet is a grassland perennial that is native to Europe, Asia and North Africa. The cucumber flavoured compound foliage is much used in salads, soups, sauces and cold drinks. It grows well in part to full sun and prefers non-acidic soils. A favorite plant of Francis Bacon. Grows 12″ high by 18 to 24″ wide. Hardy to zone 4.
Nasturtium officinale – Watercress is a semi-aquatic perennial whose leaves add a distinctive peppery flavour to salads, soups and sandwiches. It is easily grown is any moist part of the garden in full sun, producing rounded dark green leaves. Cut for fresh use using scissors (being careful not to disturb the roots) by taking about 30% of the foliage. Grows 6-12″ high. Hardy to zone 5.
